Fly Bye Restaurant Review (Arcadia)
For this review, I am in Arcadia, trying the food at Fly Bye, a restaurant that primarily serves Detroit-style pizza and crispy chicken. It is located near 40th Street and Camelback Road.

It is part of Fox Restaurant Concepts, the brand behind many of the valley’s most popular restaurants: Culinary Dropout, Doughbird, Flower Child, The Henry, Blanco Cocina + Cantina, and more.
Entering the dining room for the first time, I noticed that the place was definitely geared for takeout (very small). However, there were a few tables inside and outside.



There were no customer-facing bathrooms. However, the manager on duty may grant access to employee bathrooms [located in the back] upon request.
Fly Bye (Arcadia) does not have a self-serve beverage fountain. Instead, they offer bottled beverages only, mostly Coke products.
The menu seems typical at first, with appetizers, hoagies, chopped salads, famous pizza, and crispy chicken. But the food selection was a cut above the rest.
For example, crispy Brussels sprouts with spicy honey, parm, and breadcrumbs were available as an appetizer. You can also order a “buffalo roasted cauliflower bowl.” Or how about a “black truffle mushroom” pizza?
During my visit, I tried the Detroit-style cheese pizza (small), 3pc crispy chicken tenders (comes with fries), 12pc crispy chicken wings, and crispy Brussels sprouts.
Detroit-Style Pizza
The pizza is available in hand-stretched rounds or Detroit-style (square pan). I typically get a few toppings. But this time I only wanted cheese.
The pizza was definitely Justin Leonard Approved.
It was slightly better than the competition because of the natural-tasting crushed tomato sauce. To me, the flavor was very similar to deep dish, but with the ingredients arranged differently.
By the way, do you think Detroit-style pizza should remain in the pan when served or taken out of the pan and transferred to a flat pan? Leave a comment.




Crispy Chicken Tenders
The crispy chicken tenders are available in 3pc, 5pc, and 10pc. Fly Bye has excellent breading on their tenders.
Roughly 10 sauce options are available for chicken enhancement. They have everything from hot honey to Nashville hot. I chose “Copy Canes” sauce.
Impressive. The tenders were probably better than Canes. The “Copy Canes” sauce was very close to the real deal. Crinkle cut fries, good.







Crispy Brussels Sprouts
Man, after all these years, I didn’t know Brussel had an “s” on it! I was hesitant to try them because they were drizzled in hot honey.
I couldn’t picture a traditionally savory dish being sweet. These were surprisingly good with the hot honey.


Crispy Chicken Wings
By default, Fly Bye serves their crispy chicken wings without sauce. To add flavor, wings can be tossed in your choice of sauce, or you can get them with sauce on the side.



Overall Review
Everything I ate was Justin Leonard Approved. Great experience all around.
Clearly, the Fly Bye leadership understands their ideal customer: 1) People who want pickup or delivery service, 2) food that can be ready within 10-12 minutes, 3) but also significantly higher quality than competitors.
Given the price point, food quality, and overall experience, I think they will do really well, especially in affluent areas. Peace.
